  • 2 tablespoons minced fresh thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3 cups firmly-packed fresh kale
  • 6 strips turkey bacon, cut into 1/4-inch pieces
  • 2 tablespoons minced shallot
  • 1 medium clove garlic, minced
  • 1 tablespoon Dijon mustard
  • 3 tablespoons honey or agave nectar
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes, then toss them on a baking sheet with olive oil, thyme, salt, and pepper.
  3. Roast for about 25 minutes until tender and lightly browned.
  4. In a skillet, cook the turkey bacon pieces over medium heat until crispy. Set aside.
  5. Whisk together shallots, garlic, Dijon mustard, honey/agave nectar, apple cider vinegar, salt, and pepper in a mixing bowl.
  6. In a large bowl, combine roasted sweet potatoes and kale. Pour the dressing over the mixture and top with cooked turkey bacon. Toss gently to coat.
