  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes (for garnish)
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ¼ teaspoon kosher salt (for caramel sauce)
  • ½ cup fruit juice or vegan cream (for caramel sauce alternative)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch baking dish.
  2. Combine chopped dates and baking soda in a bowl; scald the milk and pour over the dates. Let it cool for about 15 minutes.
  3. Mix flour, baking powder, and salt in one bowl while beating eggs in another. In a food processor, blend eggs, dark brown sugar, butter, and vanilla extract until smooth.
  4. Gradually add dry ingredients and soaked dates along with their liquid. Pour batter into the prepared dish and bake for 30 minutes until set.
  5. Make the caramel sauce by melting butter with brown sugar and kosher salt, stirring in fruit juice or vegan cream until thickened.
  6. Once the cake is done, poke holes in it and drizzle one-third of the caramel sauce over it to soak.
  7. Let it rest for 15 minutes before serving topped with sea salt flakes, extra caramel sauce, and whipped cream.
