  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cups jasmine rice
  • 4 cups water
  • Pinch of salt

  1. Rinse jasmine rice under cold water until clear. Boil 4 cups of water, add rice with a pinch of salt, then cover and simmer until fluffy.
  2. In a bowl, marinate chicken with soy sauce and chili paste for about 10 minutes.
  3. Heat vegetable oil in a wok over medium-high heat; stir-fry garlic and onion until fragrant.
  4. Add marinated chicken; cook until golden brown, about 5-7 minutes.
  5. Toss in bell peppers; stir-fry for another 3-4 minutes until tender-crisp.
  6. Stir in cornstarch slurry to thicken the sauce; season with salt and pepper as needed.
