  • 28 oz mild salsa sauce
  • 2 lbs chicken breasts
  • 2 (14 oz) cans red kidney beans
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp cumin
  • 2 tsp paprika
  • 4 tsp garlic powder
  • 4 tsp chili powder
  • Fresh parsley, chopped

Instructions

  1. In a pot, combine quinoa, water, salsa sauce, salt, and black pepper. Bring to a boil, then reduce heat and cover. Simmer for 15–18 minutes until liquid is absorbed. Fluff with a fork.
  2. Rub the chicken pieces with olive oil and season with cumin, paprika, garlic powder, and chili powder.
  3. Heat a skillet over medium heat. Sear seasoned chicken pieces for 5–6 minutes on each side until fully cooked. Let chicken rest before slicing.
  4. Divide the cooked quinoa among bowls. Top with sliced chicken, kidney beans, bell peppers, and fresh parsley.
