  • 2 (6 oz) cans tomato paste
  • 3 cups water or broth
  • 4 tbsp Dijon mustard
  • 2 tbsp unsweetened cocoa
  • 2 tsp rosemary
  • 2 tsp onion salt
  • 1 tsp paprika
  • 1 tsp ground pepper
  • 1 tsp sage
  • 4 tbsp high-temperature oil (e.g., coconut oil)

Instructions

  1. In a small bowl, mix rosemary, onion salt, paprika, ground pepper, and sage. Rub generously onto beef short ribs.
  2. Heat oil in a large skillet over medium-high heat. Sear the ribs on all sides until browned.
  3. Transfer seared ribs into a slow cooker or deep baking dish.
  4. Combine tomato paste, water or broth, balsamic vinegar, minced garlic cloves, Dijon mustard, and cocoa in another bowl; mix well.
  5. Pour the sauce over the ribs in the cooker/dish.
  6. Cook on low for 7–8 hours or cover and bake at 325°F (160°C) for about 3–3.5 hours.
