  • 2 large sweet potatoes

  • 1 red bell pepper (optional)
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 3 cloves garlic
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon cornstarch + 1 tablespoon water (optional, for thickening)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss diced sweet potatoes, sliced onion, and optional bell pepper with olive oil, smoked paprika, salt, and black pepper. Spread evenly on the baking sheet.
  3. Roast vegetables for about 20 minutes until tender.
  4. Add sliced sausage to the baking sheet and roast for an additional 15–20 minutes until everything is tender and caramelized.
  5. While roasting, prepare the honey garlic sauce by whisking together honey, soy sauce, minced garlic, and apple cider vinegar in a small saucepan over medium heat. Simmer for 2–3 minutes and thicken if desired.
