  • 2 tablespoons coconut flour
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil (melted)
  • 34 tablespoons milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup or honey
  • 1/3 cup raspberry jam
  • 1/2 cup powdered sugar (optional)
  • 1 tablespoon milk (dairy or non-dairy, optional)
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together oat flour, protein powder, coconut flour, and salt. Stir in melted coconut oil, vanilla extract, maple syrup, and milk until you have a soft dough.
  3. Roll out the dough between two sheets of parchment paper to about 1/4-inch thickness and cut into eight rectangles.
  4. Place 1–2 teaspoons of raspberry jam on four rectangles; cover with remaining rectangles and seal edges using a fork.
  5. Bake for 12–15 minutes until golden around the edges. Let cool completely before glazing if desired.
