  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tbsp lemon zest (from 2 large lemons)
  • ½ cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup buttermilk or whole milk + 1 tbsp lemon juice or vinegar
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar with an electric mixer for about 3-5 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in lemon zest, fresh lemon juice, and vanilla extract.
  6. Gradually add the dry ingredients alternately with buttermilk, starting and ending with the dry ingredients. Be careful not to overmix.
  7. Pour the batter into the prepared bundt pan and smooth out the top.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Allow cooling in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  9. In a small bowl, whisk together powdered sugar and fresh lemon juice until desired consistency is reached and drizzle over the cooled cake.
