  • 1/4 cup brown sugar

  • 1/4 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 23 tablespoons milk or cream
  • Candy eyeballs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder (if using), granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Add milk, vegetable oil, eggs, and vanilla; mix until just combined. Gradually stir in hot water until smooth.
  4. Divide batter among muffin cups (about two-thirds full) and bake for 18–20 minutes until toothpick comes out clean.
  5. Allow muffins to cool completely before frosting.
  6. For frosting, beat softened butter until creamy; gradually add powdered sugar with milk and vanilla until smooth.
  7. Pipe crisscross designs on each muffin as mummy bandages and place candy eyeballs on top.
