  • ½ teaspoon ground cumin
  • ½ teaspoon kosher salt (adjust to taste)
  • ¼ teaspoon freshly ground black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until tender.
  2. While sweet potatoes roast, heat olive oil in a skillet over medium-high heat. Sauté onion and optional bell pepper for 4–5 minutes until softened. Add garlic and cook for another 30 seconds.
  3. Add ground turkey to the skillet; season with paprika, cumin, salt, and pepper. Cook for about 6–8 minutes until no longer pink.
  4. Reduce oven temperature to 375°F (190°C). In a baking dish, combine roasted sweet potatoes with turkey mixture. Top with cheese.
  5. Bake at 375°F (190°C) for 20–25 minutes until cheese is melted and bubbly. Let rest before serving.
