  • 3/4 teaspoon fine sea salt
  • 10 tablespoons unsalted butter
  • 3/4 cup bittersweet chocolate chips
  • 1/3 cup unsweetened Dutch processed cocoa powder
  • 1 tablespoon espresso powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 tablespoon vanilla paste or extract
  • 1 cup hot brewed espresso or strongly brewed coffee
  • 2 1/2 tablespoons granulated sugar
  • 8 ounces mascarpone cheese
  • 2/3 cup cold heavy whipping cream
  • 2 teaspoons vanilla bean paste or extract
  • 16 Savoiardi ladyfingers

Instructions

  1. Preheat your oven to 350°F (180°C) and line a 9×9 baking pan with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour and fine sea salt. Set this mixture aside.
  3. In a large microwave-safe measuring cup: Combine the unsalted butter and bittersweet chocolate chips. Heat in the microwave until melted, stirring every 30 seconds until smooth. Once melted, whisk in the cocoa powder and espresso powder until well combined.
  4. In a large mixing bowl: Beat together the granulated sugar, brown sugar, eggs, egg yolk, and vanilla with a whisk until pale and fluffy. Gradually pour in the melted chocolate mixture while whisking constantly until fully incorporated.
  5. Fold in the flour mixture gently until just combined. Do not overmix!
  6. Pour the batter into your prepared baking pan. Bake for 18–25 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  7. After baking, let cool on a wire rack for about 15 minutes before transferring to the freezer while preparing your filling.
