  • 90 ml thickened or whipping cream (minimum 35% fat)
  • 200 g dark cooking chocolate (40% cocoa solids), finely chopped
  • 1 tablespoon instant coffee granules
  • 125 g milk cooking chocolate (for coating)

Instructions

  1. Line a small flat dish with non-stick baking paper.
  2. In a small saucepan, warm the cream over low heat until just below boiling.
  3. Turn off the heat; add chopped chocolate and instant coffee, stirring until smooth.
  4. Pour the mixture into the lined dish; refrigerate for about 2 hours or until firm.
  5. Scoop about 3 teaspoons of the mixture and roll into small balls; chill for another 30 minutes.
  6. Melt the milk chocolate over simmering water; cool slightly before use.
  7. Dip each truffle into melted chocolate to coat thoroughly; place on the tray to set.
  8. Refrigerate again for 30 minutes until firm.
