  • 2 eggs
  • 1 cup baby spinach
  • 1 cup sliced mushrooms (cremini or button)
  • 2 tbsp cream cheese (or dairy-free spread)
  • 1 garlic clove, minced
  • 1 tsp olive oil or butter for cooking
  • 2 slices fresh tomato

Instructions

  1. Boil the eggs for 7 minutes for jammy yolks, then cool in ice water, peel, and halve.
  2. Toast the bread until crispy.
  3. In a frying pan, heat olive oil over medium heat; add garlic and sliced mushrooms. Sauté for 5-6 minutes until golden brown, seasoning with salt and pepper.
  4. Wilt the spinach in the same pan briefly.
  5. Assemble: Spread cream cheese on one slice of toast; top with tomato slices and parsley. Add sautéed mushrooms to the other slice.
  6. Plate with halved jammy eggs and wilted spinach on the side; finish with chili flakes and salt.
