  • 1 tablespoon baking powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
  3. Add chili beans, diced tomatoes, corn, and chili seasoning to the skillet. Stir and simmer for about 5 minutes.
  4. In a mixing bowl, whisk together cornmeal, flour, baking powder, salt, and pepper.
  5. In another bowl, mix milk and egg; then combine with dry ingredients until just blended.
  6. Spread the meat mixture in a baking dish; top with half of the cheese.
  7. Pour cornbread batter over the meat layer and sprinkle remaining cheese on top.
  8. Bake for 30-35 minutes until golden brown.
  9. Allow to cool slightly before serving.
