  • 4 skinless, boneless chicken breasts
  • 680g baby red or Yukon Gold potatoes, halved
  • 4 garlic cloves, chopped
  • 35g grated fresh Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian herb blend
  • 0.5 tsp smoked paprika powder
  • 0.5 tsp salt, separated
  • 0.25 tsp ground black pepper, separated

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry and rub with a mixture of 1 tbsp olive oil, Italian herbs, smoked paprika, half the salt, and black pepper.
  3. In a mixing bowl, toss halved potatoes with remaining olive oil, grated Parmesan, chopped garlic, and seasonings until coated.
  4. Arrange seasoned chicken on one side of the baking sheet and spread the potato mixture on the other side.
  5. Bake for 25–30 minutes until chicken is cooked through (74°C or 165°F) and potatoes are golden brown.
  6. For extra crispiness, broil for an additional five minutes if desired.
