  • 12 oz (340 g) fettuccine or linguine
  • 2 large leeks, sliced
  • 8 oz (225 g) cremini or button mushrooms, sliced
  • 1 ½ cups (150 g) shredded Gruyère cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup (120 ml) heavy cream
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente. Drain and reserve ½ cup of pasta water.
  2. In a skillet over medium heat, melt butter with olive oil. Add sliced leeks and cook until caramelized (12-15 minutes).
  3. Stir in mushrooms and sauté until browned (6-8 minutes), then add garlic for an additional minute.
  4. Lower the heat, add heavy cream and half of the Gruyère cheese; stir until melted.
  5. Combine cooked pasta with the sauce, adding reserved pasta water as needed to achieve desired consistency. Stir in remaining cheese; season with salt and pepper.
  6. Serve hot, garnished with parsley if desired.
