  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup all-purpose flour
  • 45 Biscoff cookies (for topping)

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, whisk together the sugars, eggs, and vanilla extract.
  3. Melt the butter and chocolate chips in a microwave-safe bowl until smooth, then mix in cocoa powder.
  4. Combine the melted mixture with the egg mixture until just combined.
  5. Fold in flour, espresso powder, and salt until fully incorporated.
  6. Pour half of the brownie batter into the prepared pan, followed by a layer of frozen cookie butter. Top with remaining batter.
  7. Add broken Biscoff cookies on top and drizzle with warmed cookie butter.
  8. Bake for about 30-40 minutes until a toothpick comes out with moist crumbs. Let cool before cutting.
