  • 2/3 cup mashed banana (1 large or 2 small bananas)
  • 1/3 cup pecans, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup candied ginger, chopped
  • 1 ounce cream cheese, softened (for glaze)
  • 3/4 cup powdered sugar (for glaze)
  • 1 teaspoon vanilla extract (for glaze)
  • 2 to 3 teaspoons whole milk (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a jelly roll pan lined with parchment paper.
  2. Mix cream cheese and sugar until smooth. Add one egg and milk; blend well.
  3. Whisk flour, baking powder, and baking soda in a separate bowl.
  4. In a large bowl, beat egg yolks with vanilla extract until thick; gradually add sugar and mashed banana.
  5. In another bowl, beat egg whites until stiff peaks form; fold into yolk mixture along with the flour blend.
