  • 250g chestnut mushrooms, cleaned and sliced
  • 1 clove garlic, crushed
  • 15ml extra virgin olive oil
  • 15ml tamari sauce
  • 2 tablespoons fresh thyme leaves
  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Pinch sea salt or pink Himalayan salt
  • 2 slices sourdough bread or bread of choice

Instructions

  1. Heat olive oil in a non-stick frying pan over medium heat.
  2. Add crushed garlic and sauté for 1 minute.
  3. Incorporate sliced mushrooms and tamari sauce.
  4. Cook for 8 to 10 minutes until mushrooms release moisture and become tender.
  5. Stir in thyme leaves and season with freshly ground black pepper.
  6. In a bowl, mash the avocado with a fork until creamy.
  7. Stir in lemon juice and a pinch of salt until smooth and well combined.
